چکیده

Safran (Crocus sativus L.) denildi?inde ?üphesiz akla ilk gelen dünyan?n en pahal? tar?m ürünü / baharat? oldu?udur. Bu ifadenin do?ru olmas?ndan kaynakl? olarak bu kadar k?ymetli bir ürüne pek çok yerinde ve kültüründe türlü de?erler yüklenmesi de normal kabul edilmelidir. Öyle ki Orta Ça?’da safranda hile yapanlar?n idamla cezaland?r?lmas?na de?in varacak ölçüde de?er görmü?tür. Safran, antik ça?lardan beri farkl? medeniyetlerce kullan?lm??, folklordan yeme içme al??kanl?klar?na, tekstilden kozmeti?e alanda istifade edilmi?tir. Safran?n kullan?m alanlar?n?n ke?fiyle birlikte kültüre al?nd??? y?llardan günümüze faaliyette ciddi de?i?im ya?anmam??t?r. Nitekim safran, günümüzde dahi makineli ziraata elvermedi?i için a?amalar?n?n tamam?na yak?n? kol gücüyle yap?lmakta da bitkinin pazar de?erini art?rmaktad?r. As?rlard?r halk hekimli?inde kullan?lan safran?n, yap?lan çal??malarla kanser ara?t?rmalar?nda umut vadeden sonuçlar ortaya koymas?, talebini kat daha art?rm??t?r. Günümüzde ?ran ba?ta olmak üzere Afganistan, Hindistan (Ke?mir), ?spanya, ?talya, Yunanistan Fas gibi belli ba?l? üreticiler yan? s?ra lokal ölçekte üretim yapan birkaç ülkede (Türkiye, ?srail, Cezayir, Fransa gibi) yeti?tiricilik söz konusudur. çal??mada ise safran Ziraat Co?rafyas? oda??nda incelenerek tarihsel süreçteki a?amalar, botanik zirai özellikler, iktisadi durum alanlar? sektörel sorunlar co?rafi i?aret niteli?indeki safranlar bütün incelenmi?tir. geni? perspektiften yola ç?karak ürününe yönelik ulusal uluslararas? yap?lmas? gerekenler s?ralanm??t?r.
